Oamaru is one of the best townships in the South Island for this kind of thing. The Victorian precinct is built from that gorgeous whitestone and it's genuinely well-preserved, not just a polished tourist set-piece. Wander the old quarter, poke around the galleries and shops, and then head into Steampunk HQ for something properly weird and wonderful. The infinity room alone is worth it.
Dunedin punches above its weight culturally. The Otago Museum is legitimately good, the Settlers Museum tells the regional story well, and the Public Art Gallery has been at it since the goldrush days. If you're into historic homes, Larnach Castle out on the peninsula is a gothic revival oddity with great views. And if you're a beer person, the Speights Brewery tour is a solid couple of hours of local history with obvious perks at the end.
For the Saturday morning crowd, the Otago Farmers Market is worth a look too. Travellers who've hit it mid-trip rave about it, and it's a good excuse to stock up on local produce before heading out to the peninsula.
