The DOC Visitor Centre at Aoraki / Mt Cook National Park is genuinely one of the better ones in the country. It's full of mountaineering history and does a good job of capturing the pioneering spirit of the place. If you've just arrived, go here first before heading further into the valley. The rangers are the real drawcard though - free, current, firsthand knowledge about weather and track conditions. That kind of local intel is worth a lot in a region where the weather can change everything.
The visitor centres at Lake Tekapo and Twizel are more functional than special - fine if you need maps or a quick question answered, but they're not the reason to linger. In a region this spectacular, the outdoors is where you want to be spending your time, not inside a building. Think of the DOC centre at Mt Cook as the one exception to that rule.
