Central Otago isn't an obvious water destination, but it's got a few genuinely good options if you know where to look. The standout for me is a jet boat on the Clutha River - fast, dramatic, and the guides know the history of this goldfields country cold. St Bathans is another one worth knowing about: Blue Lake is right next door to the Vulcan Hotel and you can just wander down and have a dip. It's simple and unhurried, which feels right out here.

Trout Country

The rivers and lakes through Central Otago are legitimate trout fishing territory. There are a handful of local guiding operations who know these waters well, and if fly fishing is your thing, this part of the South Island is worth taking seriously. The landscape is spare and wide open, the fish are real, and you're well clear of the Queenstown crowds.
